Durian Cupcakes

Last weeks friend get some Durian us but not very nice the taste. I put in tupperware in refrigerator 3 days. Yesterday after works at night make it 19 durian cupcakes. first time to make this cupcakes. The taste still can.

材料:
去核榴莲肉约120g(先搅烂成糊状再过筛)
奶油60g
糖60g(我用了30g红糖,30g白糖)
鸡蛋3个
低筋面粉90g
发粉1小匙
盐1/4小匙
塔塔粉1/4小匙
烤焙:
1. 蛋白加入塔塔粉和30g白糖 打至硬性发泡,冷藏备用。
2. 奶油加30克红糖打至松发。
3. 蛋黄逐个加入拌匀。
4. 榴莲茸加入拌匀。
5. 筛入粉料拌匀便是榴莲面糊。
6. 取1/3打发蛋白加入榴莲面糊用橡皮刮刀拌匀。
7. 重复步骤( 6 )。
8. 把拌匀的面糊倒入剩余的蛋白里,拌匀,即成蛋糕面糊。
9. 把面糊舀8分满入纸杯里,烤箱预热至150度,烤约25分钟或至熟。(温度视个人烤箱)

Christmas Fruit Cake with Brandy 2011

I make 2 fruit cake, one for my daughter ILTI Techer Mrs Kok, she is very nice teacher always get cake, curry puff and Kaya puff to my children. She is Christian and this year she with huppy go to Melbourne with 3 son celebrate Merry Christmas there.  An other one for my home children and sweetheart.
